Ask the Butcher
Our butchers have seen (and cooked) it all. Below are some of the questions we hear most often. Don’t see yours? Stop by the counter—we’re always happy to talk meat.
How do I cook a Tri-Tip?
Tri-Tip is best prepared low and slow on the grill or in the oven, then finished over high heat for a great crust. We season ours with Pappy’s or Santa Maria seasoning—ask your butcher for prep tips.
Do you offer special orders for holidays or large events?
Yes, and we encourage you to plan ahead! We can accommodate large orders for holidays, parties, and catering needs. Contact your nearest location early—especially around Thanksgiving, Christmas, and summer grilling season.
What’s the difference between Prime, Choice, and Select beef?
The main difference comes down to marbling (the flecks of intramuscular fat) and texture. More marbling directly affects flavor and tenderness, which is why Prime sits at the top, followed by Choice, then Select. When you want a rich, juicy steak, marbling is what to look for.
What’s the difference between a ribeye and a New York strip?
Both steaks come from the loin, just from different areas. The ribeye comes from the forequarter and the New York strip from the hindquarter. Ribeye has more fat, making it richer and more tender, while the leaner New York strip offers a firmer bite.
